Oka to Shio is a dining format designed for the Michelin Star Chef Nakayama Niki. Her cuisine is Kaiseki, which focuses on the preservation of the beauty and freshness of the ingredients.

Oka to Shio was designed with the theme of gratitude.
Considering the nuances of Nakayama's plating style, the dining format had to embody the subtlety of gratitude. To the lands, to the sea, to the ingredients.
Prototypes & Experimentation
To achieve the gentle curves to represent nature's Hills & Tides, the serving plates were hand made to achieve a natural and non-uniform curves.
